Antioxidant Pumpkin Curry Soup
1. 2 cans of pumpkin
2. 1 tsp chili sauce
3. 4 shallots
4. 2 tsp butter (unsalted)
5. 1 tsp ginger
6. 2 tbl curry
7. 2 garlic cloves
8. 2 tsp kosher salt
9. 3 1/2 c water
10. 2 cups chicken broth reduced sodium
11. 1 can of unsweetened coconut milk
Directions fo Preparation of Soup.
Sauté shallots in the butter until fragrant
Add ginger and curry. Stir in the pumpkin, broth, coconut milk and water and simmer uncovered for 30 minutes. Salt to taste.
